Ingredients
3 eggs, separated
pinch of mustard powder
110g/4oz cheddar cheese, grated
handful of basil leaves, shredded
handful of olives, to serve

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Whisk the egg whites in a large clean bowl to form stiff peaks.
3. In a separate bowl, whisk the egg yolks with the mustard, cheese and basil to combine.
4. Gently fold the egg whites into the cheese mixture and then spoon into a small greased hot frying pan.
5. Bake in the oven for 10-12 minutes or until well risen and golden.
6. Remove from the oven and scatter with olives to serve.
