Ingredients
200ml/7¼fl oz double cream
1 tbsp caster sugar
½ orange, zest only, grated
juice of half a lemon
1 tsp vanilla essence
1 tbsp ricotta
2 prunes, stones removed, sto serve
For the honeyed oranges
1 tbsp honey
1 orange, segmented
Method
1. In a bowl, whisk the cream to slightly thicken.
2. Add the caster sugar, orange zest, lemon juice and vanilla essence and stir
to combine.
3. Add the ricotta and stir again. Transfer the mousse mixture into a small
glass or ramekin.
4. To make the honeyed oranges, in a small pan, heat the honey and add the
orange segments to warm through.
5. Serve the honeyed oranges with the mousse and the prunes alongside. |
