Ingredients
oil, for frying
2 slices of bread
4 cherry tomatoes
3-4 chunks of brie
handful of basil leaves
salt and freshly ground black pepper
For the herb oil
handful of parsley, coriander, basil, chervil, chives
4-6 tbsp olive oil
salt and freshly ground black pepper
Method
1. Heat a little oil in a non-stick frying pan and pan-fry the bread slices for
1-2 minutes on each side or until golden brown.
2. Transfer the toast to a serving plate and top with the tomatoes, brie chunks,
basil and seasoning.
3. To make the herb oil, blend the parsley, coriander, basil, chervil, chives,
oil and seasoning in a mini food processor until smooth. Drizzle the oil over
the bruschetta to serve.
