Ingredients
1 tbsp olive oil
½ onion, peeled and chopped
½ romero pepper, de-seeded and chopped
handful of olives, pitted
pinch of salt and freshly ground black pepper
70g/2½oz goats' cheese, cut into slices
Method
1. Heat the oil in a non-stick frying pan and sauté the onion and pepper for 6-8
minutes, over a medium heat, until softened.
2. Stir in the olives and seasoning and heat for a further few minutes.
3. Arrange the roasted pepper and onion onto a serving plate and place the
goats' cheese slices on top.
4. Serve. |
