Potato rosti and goats\' cheese parcels

Ingredients
1 tsp butter
1 tsp olive oil
55g/2oz new potatoes, grated
1 tbsp plain flour
1 tsp fresh thyme, chopped
salt and freshly ground black pepper, to taste
30g/1oz goats' cheese, sliced into discs
sprig of mint, for garnish

Method
1. Heat the butter and the olive oil in a small frying pan, over a moderate heat.
2. Mix the grated potato with the flour and thyme and season to taste.
3. Add half of the potato mixture to the pan. Push down into the pan, to flatten.
4. Place the slice of goats' cheese into the middle of the potato, then top with the remaining potato mix.
5. Fry for 5-6 minutes, before turning over. Cook for a further 4-5 minutes, or until the rösti has cooked.
6. Turn out onto a serving plate, and garnish with the sprig of mint.
