Ingredients
500g/1lb 2oz new potatoes, sliced into disks
1/3 shallot, finely diced
120g/4½oz stilton, crumbled
1 tbsp fresh parsley, chopped
1 tbsp red wine vinegar
4 tbsp olive oil
salt and freshly ground black pepper, to taste
Method
1. Bring a large pan of water to the boil. When boiling, add the sliced new
potatoes. Cook for 3-5 minutes, or until tender. Remove from the heat and drain
well.
2. While the potatoes are cooking, place the finely diced shallot into a bowl
and crumble the cheese over the top. Stir well.
3. In another bowl, mix together the freshly chopped parsley, red wine vinegar,
olive oil and seasoning, to taste. Whisk well, to emulsify.
4. When the potatoes are drained and ready, add them to the vinaigrette, toss
well, then add the entire mixture to the cheese and shallot mixture.
5. Stir well to combine, before spooning into a serving bowl, to serve. |
