Ingredients
8 medium-sized plum tomatoes
150g/5¼oz buffalo mozzarella
salt and freshly ground black pepper
virgin olive oil
handful basil leaves
balsamic vinegar
Method
1. First, thinly slice the plum tomatoes and arrange onto two oven-proof serving
plates.
2. Slice the buffalo mozzarella into about six slices and arrange three slices
on top of the tomatoes.
3. Season, drizzle with olive oil and place under a pre-heated grill until the
cheese starts to melt.
4. Remove and clean the plate edges, sprinkle with the chopped or ripped basil
and drizzle balsamic vinegar around the edge of the plate. |
