Chutney and brie brioche rolls

Ingredients
1 tbsp olive oil
½ red onion, chopped
1 garlic clove, crushed
1 tsp fresh thyme, chopped
salt and freshly ground black pepper, to taste
2 tsp balsamic vinegar
2 brioche rolls, sliced open
4 tbsp cranberry jelly
8 slices brie

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the oil in a small frying pan, over a moderate heat. Add the chopped red onion and the crushed garlic and fry for 2-3 minutes.
3. Add the chopped thyme and season to taste. Then add the balsamic vinegar and heat through for a further 3-4 minutes.
4. Spread the brioche rolls with the cranberry jelly, then place the brie slices on top.
5. Place the brioche rolls into the pre-heated oven for 4-5 minutes, or until the cheese has melted.
6. Remove from the oven, and spoon the chutney over the top, to serve.
