Ingredients
55g/2oz butter
2 tbsp plain flour
100ml/3½fl oz milk
1 tbsp stilton
½ tsp Dijon mustard
2 eggs, separated
2 ramekins, greased and lightly floured
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Whisk the egg whites to form soft peaks and put to one side.
3. Over a low heat, melt the butter in a saucepan and whisk in the flour to make
a roux. Add the milk gradually and stir to make a white sauce.
4. Once smooth, remove from the heat and stir in the stilton and Dijon mustard.
5. Fold the egg whites into the cheese sauce and pour into the ramekins.
6. Place the ramekins in a deep-sided baking dish. Pour water to halfway up the
sides of the ramekins to make a bain marie. Transfer to the oven and cook for
12-15 minutes.
7. Remove from the oven and serve at once. |
