Ingredients
1 slice of bread
2 tbsp cream cheese
2 tbsp basil, chopped
salt and freshly ground black pepper, to taste
1 small handful of rocket
olive oil, for drizzling
1 fig, sliced,for garnish
For the garnish
30g/1oz walnuts
2 tsp olive oil
Method
1. Place a griddle pan on the hob, and when hot, place the slice of bread on it,
and griddle for 1-2 minutes each side, or until nicely coloured.
2. In a small bowl, mix the cream cheese and the basil, season to taste, and
then spread on to the griddled slice of bread.
3. Place the rocket leaves on top of the cream cheese mix.
4. Drizzle with olive oil, and top with the sliced fig.
5. For the garnish, heat the oil in a small pan, add the walnuts, and fry for
3-4 minutes, on a gentle heat.
6. Serve with the bruschetta. |
