Ingredients
vegetable oil, for deep-frying
85g/3oz unsalted butter
220ml/7½fl oz water
110g/4oz plain flour
3 eggs, beaten
55g/2oz stilton, crumbled

Method
1. Heat a pan one-third filled with vegetable oil, for deep-frying. (CAUTION: Hot oil can be very dangerous. Do not leave unattended.)
2. Put the butter and water into a pan and slowly heat allowing the butter to melt.
3. Beat in the flour hard using a wooden spoon until thickened and smooth. Remove from the heat and beat in the eggs and stilton until combined.
4. Using two dessert spoons, form the mixture into a lozenge shape between the spoons and deep-fry in the hot oil for 1-2 minutes, or until golden. Continue to do this until you have used all the mixture.
5. Carefully remove using a slotted spoon and drain on kitchen paper.
6. Transfer to a serving bowl/plate and serve.
