Bean salsa with griddled cheese

Ingredients
For the bean salsa
handful of tinned mixed beans
1 tbsp olive oil
½ onion, peeled and very finely diced
drizzle of sesame oil
dash of soy sauce
1 lemon, zest only
85g/3oz cherry tomatoes, diced
For the cheese
4 tbsp olive oil
1 sprig of thyme
pinch of rock salt
½ red chilli, chopped
2 thick slices of halloumi cheese
sesame seeds, to sprinkle

Method
1. For the salsa, mix the beans, oil, onion, sesame oil, soy sauce, lemon zest and cherry tomatoes in a bowl. Spoon the bean salsa onto a serving plate.
2. For the cheese, mix the oil, thyme, rock salt and chilli together in a bowl. Dip the halloumi slices into the mixture and then griddle in a hot pan for 2-3 minutes on each side.
3. Serve the griddled cheese on top of the salsa and sprinkle with sesame seeds to serve.
