Ingredients
For the wraps
handful of tinned mixed beans
½ tomato, diced
½ red chilli, diced
85g/3oz halloumi cheese, diced
2 tbsp Greek-style yoghurt
3 wraps
For the curry sauce
drizzle of olive oil
½ onion, peeled and chopped
1 lime, zest only
100ml/3½fl oz double cream
splash of white wine
pinch of curry powder
¼ red chilli, diced
½ lime, juice only
handful of coriander, leaves, chopped
Method
1. Mix the beans, tomato, chilli, cheese and yoghurt together in a bowl.
2. Divide the mixture between three wraps and roll up.
3. Heat a griddle pan brushed with oil and griddle the wraps for 2-3 minutes on
each side.
4. For the sauce, heat the oil in a pan and sauté the onion for 2-3 minutes, to
soften.
5. Add the lime zest, cream, wine, pinch of curry powder, chilli and lime juice
and reduce for 8-10 minutes, to thicken. Stir in the coriander.
6. Transfer the wraps to a serving plate and pour the sauce over to serve. |
