Lamb pizza with mint and red onion salad

Ingredients
225g/8oz plain flour
pinch of chilli flakes
a few chives
1 garlic clove, peeled and crushed
2 tbsp olive oil
3-4 tbsp water
drizzle of oil
125g/4½oz lamb mince
½ red onion, peeled and sliced
salt and freshly ground black pepper
drizzle of oil
55g/2oz grated cheese (such as feta or goats' cheese)
For the salad
½ red onion, peeled and sliced
handful of mint leaves
a few chives, chopped
drizzle of oil
salt and freshly ground black pepper

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the flour, chilli flakes, chives, garlic, oil and water into a food processor and blend to form a smooth dough.
3. To make the pizza bases, using floured hands, divide the dough into three equal portions. Roll out on a floured surface into three rustic circles.
4. Heat a griddle pan brushed with oil and griddle the pizza bases for 2-3 minutes on each side.
5. Scatter the lamb on top of each and then arrange the red onion on each one. Season with salt and pepper and drizzle with oil.
6. Place on a baking tray and bake in the oven for 10-15 minutes. Sprinkle with cheese and return to the oven for 3-4 minutes, or until the cheese has melted and the lamb cooked through.
7. For the salad, toss the red onion, mint, chives, oil and seasoning into a bowl.
8. Transfer to a serving plate and serve the pizzas on top.
