Ingredients
½ pint milk
55g/2oz caster sugar
150ml/5¼fl oz double cream
½ tsp vanilla essence
2 eggs
8 small rounds of brioche (use a sharp cutter to make circles)
handful of sultanas
Method
1. Heat the milk, sugar, cream and vanilla essence in a pan, whisking for a few
minutes.
2. Beat the eggs in a large bowl and then pour the hot milk over the eggs,
whisking constantly.
3. Dip the brioche rounds into the mixture and then layer the brioche rounds
into two ramekins, alternating with the sultanas.
4. Place in the microwave and cook on high for 4-5 minutes.
5. Remove from the microwave and turn out onto serving plates. Serve at once. |
