Cheese and onion bruschetta

Ingredients
1 tsp butter
1 tbsp olive oil
½ onion, sliced
4 slices ciabatta
salt and freshly ground black pepper, to taste
80g/3oz cambozola cheese, sliced

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the butter and one teaspoon of olive oil in a small frying pan, and as the butter begins to melt and foam, add the sliced onion. Continue cooking over a medium heat for 5-6 minutes, or until the onions have begun to caramelise.
3. Place the pan into the oven, to continue cooking for 10-12 minutes.
4. Meanwhile heat a griddle pan over a moderate heat.
5. Drizzle the sliced ciabatta with the remaining olive oil, season to taste, then place into the hot griddle pan.
6. Griddle for 1-2 minutes, on each side, or until golden.
7. Top each slice with a bit of the sliced cambozola, then place into the oven for 3-4 minutes, or until the cheese has begun to melt.
8. Remove from the oven, place onto a serving plate, and spoon the caramelised onions over the top, to serve.
