Ingredients
For the pizza
85g-110g/3-4oz plain flour, plus extra, for dusting
2 tbsp olive oil
splash of warm water
4 tbsp tomato purée
4-5 salami slices
8-10 cherry tomatoes, quartered
110g/4oz taleggio cheese, sliced
For the salad
1 handful rocket leaves
½ banana shallot, sliced finely
salt and freshly ground black pepper
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the plain flour into a bowl with one tablespoon of olive oil. Add
enough water to make a soft dough.
3. Knead the dough with your hands, then roll out onto a lightly floured
surface, and cut into a rough circle shape to make a flat bread.
4. Heat a small frying pan, until almost smoking, then add the flat bread and
dry fry for 1-2 minutes on each side.
5. Remove from the pan and spread the flatbread with the tomato purée. Top with
the salami slices, quartered cherry tomatoes and the sliced cheese.
6. Place in the hot oven for 5-6 minutes, or until the cheese has melted.
7. Meanwhile, place the rocket leaves into a bowl, drizzle over a tablespoon of
olive oil, and add the finely sliced banana shallot. Season to taste then toss
well to combine.
8. Remove the pizza from the oven and top with the rocket salad, to serve.
