Skillet scones with roasted tomatoes

Ingredients
2-4 vine tomatoes, halved
1 tbsp olive oil, plus extra for drizzling
salt and freshly ground black pepper
110g/4oz self-raising flour
½ red onion, chopped
pinch of salt
handful of chives, chopped
100ml/3½fl oz milk

Method
1. Preheat the oven to 200C/400C/Gas 6.
2. Place the tomatoes on a baking sheet and drizzle with olive oil, salt and pepper.
3. Bake the tomatoes for 8-10 minutes until they are soft.
4. In a mixing bowl, combine the flour, red onion, salt and chives.
5. Make a well in the flour mixture and pour in the milk and the tablespoon of olive oil. Mix the ingredients together well to form a dough.
6. On a floured board, roll out the dough into 2cm (¾in) thickness and cut into circles with a pastry cutter.
7. Heat an oiled griddle pan until it is very hot.
8. Grill the scones for 2-3 minutes on each side.
9. Transfer the griddle pan into the oven for 8-10 minutes to finish cooking the scones.
10. To serve, slice the scones into halves and use to sandwich the roasted tomatoes.
