Ingredients
For the pizza dough
4 tbsp plain flour
20g/1oz butter
1 egg yolk
For the salsa verde
8 black olives
3 sun-dried tomatoes
2 tsp capers
1 clove garlic
2 tbsp parsley
2 tbsp olive oil
½ tsp chilli flakes
2 anchovy fillets
1 egg
2 tbsp parmesan cheese, shaved
Method
1. Preheat the oven to 220C/420F/Gas 7.
2. Heat a baking tray in the oven.
3. To make the dough blend the flour and butter in a food processor and add the
egg yolk to bind.
4. Place on a floured surface and roll out into a 20cm/8inch round.
5. Place on the heated baking tray and put in the oven for 3-4 minutes.
6. Meanwhile make the salsa verde. In a mini blender blend together the capers,
garlic, parsley, olive oil, chilli flakes and anchovy fillets.
7. Remove the pizza from the oven and spread with the salsa verde mixture.
8. Top with the black olives, sun-dried tomatoes and crack the egg on top.
9. Top with the parmesan and return to the oven for six minutes, or until
cooked. |
