Ingredients:

  • 3 Carrots
  • ¼ tsp Salt
  • 1 tbsp Sugar
  • 2½ cup Water
  • 3-4 Mint leaves
  • 1 tsp Lemon juice
  • 1 tbsp fresh Cream
  • ¼ tsp Chilli powder
Method:
  1. Wash carrots, scrape and cut in chunks.
  2. Add one cup water for boiling carrots, boil and simmer for 5 minutes.
  3. Mince mint leaves to a very fine paste.
  4. Put carrots in a mixer, add lemon juice, salt, sugar, chilli powder. Run till carrots are well pulped.
  5. Add water. Run mixer to mix well.
  6. When well blended, strain through sieve.
  7. Add mint, stir.
  8. Serve chilled in tall glasses and top with a small swirl of cream.
Tip: Always use natural fruit juices. Canned or artificial juices suck
